Ingredients

12 wide-mouth pint (2-cup) canning jars with lid and rings
14Poundassorted dried peas, beans and lentils(at least 8 different varieties):
  pink beans
  black beans
  baby lima beans
  lentils
  red lentils
  black-eyed peas
  red kidney beans
  pinto beans
  split peas
  great northern beans
  small red beans
  white beans
12 italian-flavor bouillon cubes (note: substitute beef-flavor if you cannot find italian-flavor cubes!)
12 bay leaves

Instructions

confetti bean soup in a jar1. Wash, rinse and dry canning jars.

2. Layer beans in jars. Add 1/4-cup of each type of bean to the jars, layering the beans. Choose the most colorful bean for the bottom layers of the jar. Add eight 1/4-cup layers to each jar.

3. Place 1 bay leaf and one bouillon cube on top of the beans in each jar.

4. Seal each jar using lids and rings.

5. Cut appropriate amount of 7-inch circles from cotton fabric. Top each jar with fabric circle, and tie with ribbon.

6. Print appropriate amount of copies of printable gift tag. Cut gift tags apart and attach to jars with ribbon.

Notes

Recipe Instructions (include on gift tag):

Set aside bouillon cube and bay leaf and choose method to soak
beans.

Quick soak: Rinse and sort beans in a large pot. Add 6-8 cups of hot water. Bring to a rapid boil, and boil for 2 minutes. Remove from heat. Cover and let stand for 1 hour. Drain soak water and rinse beans.

Overnight soak: Rinse and sort beans in a large pot. Add 6-8 cups cold water. Let stand overnight, or at least 6 to 8 hours. Drain soak water and rinse beans.

To cook: Place beans in a large pot. Add:

6 cups water
1 can (14 oz.) chopped tomatoes in juice
bay leaf
bouillon cube

Simmer gently until beans are tender, about 2 hours. Season to taste with salt and pepper.

Great Gift

I made a dozen for my group of friends. I used the holiday zip lock bags and pressed all the air out of the bags so that they layed flat.
After attaching the gift tags to the bags, I put a bag of beans and cornbread in a gift bag with tissue. Lovely presentation and everyone enjoyed receiving and using their gift.

What spices and how much can you put in the spice packet and attach to the jar?

How early...

How early can I make these? I'm making about two dozen, and dont' want to be making them all the night before, would it be crazy to do it a week or so in advance?

Spice Packet

I did this many years ago and am thinking of doing it again. I created a homemade spice packet and included it attached to the outside and a mini bottle of tabasco. I didn't use jars either, I was too poor for that! I sewed some linen looking fabric into bags and ironed on the letters BEANS onto the bag, which were cut out of chili pepper fabric. This time I'll use the mason jars and decide about the spices...thanks for the ideas!

Sort beans?

Why sort beans? Seems the instructions call for putting them all in the same pot, so what does "sort beans" mean?

in this case it refers to looking for any beans that are or look bad

It means to sort through and

It means to sort through and remove dirt or rocks that somtimes are in with the beans.

I suspect they mean for you to sift through each bag of beans looking for broken beans, really bad looking beans, and in my frequent experience, small rocks. Get rid of these before you rinse the beans and soak them. If you have never looked closely at what comes in a bag of dried beans, this is the time to start. My mother taught me this.

From making bean soups over the years, 'sorting the beans' simply means going through the beans to make sure there aren't any 'stones' or 'non-bean items' in the beans, that none of the beans are 'spoiled' or marred. The instructions would be a bit more clear if it simply said, "Sort through the beans ......" But, go ahead and just put all the beans together and finger through them to make sure there are no 'foreign' items among them.
